Easiest veg soup in the world

    Making soup is not rocket science and this recipe is simple, tasty and quick. Use any veg you fancy, it all adds to the flavour.

    Serves: 4 

    • 500g (1 lb) assorted veg (onions, carrot, celery, broccoli)
    • salt and pepper
    • 600ml (1 pt) hot veg or chicken stock
    • 1 tablespoon olive oil
    • 1 tablespoon garlic cream cheese

    Prep:10min  ›  Cook:25min  ›  Ready in:35min 

    1. Chop all veg and saute in olive oil in a saucepan for about 5 minutes. Season with black pepper.
    2. Add hot veg or chicken stock and simmer until tender.
    3. Add garlic cream cheese and stir until melted.
    4. Blend until mostly smooth (a stick blender is easiest)
    5. Serve with crusty bread and enjoy.


    Use plain cream cheese if you don't like garlic. I've also added a dollop of pease pudding at times to add more depth/thicken.
