Zesty nibblets

    Chicken wings (nibblets) are cooked on the stovetop in a sweet and zesty sauce of marmalade and juice.

    Serves: 4 

    • 1 large onion (purple if desired)
    • 3 sprigs coriander
    • 12 fresh chicken wings (skin on for flavour)
    • salt
    • 330g marmalade with ginger or tangelo
    • 480ml prepared Raro® powdered drink mix

    1. Peel, halve and slice onion, put aside. Chop coriander, put aside.
    2. Remove nibblets and place in a bowl, leave the juices in the pot.
    3. Place a large pot on high heat.
    4. Generously salt the chicken nibblets and add to pot.
    5. Let the nibblets sizzle and brown. Scrape the flavoursome nibblets off the bottom of the pot when stuck.
    6. Reduce heat, add onion and cook for 2 minutes, stirring. Lower the heat to a simmer.
    7. Add marmalade and mix to coat into the onions. Return nibblets to pot.
    8. Add coriander, stirring to coat. Pour in the juice and allow to simmer for 8 minutes.


    If served as a main course, serve with steamed basmati rice and pumpkin.
