Ratatouille is a classic vegetarian French dish that I like to make by roasting the vegetables to get that caramelised flavour.

1 large aubergine, cubed
2 courgettes, thinly sliced
2 heirloom tomatoes, sliced into wedges
1 onion, sliced into thick rings
1 red pepper, sliced into strips
4 cloves garlic
2 tablespoons olive oil
2 tablespoons chopped fresh rosemary
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 tablespoon balsamic vinegar

Preheat oven to 200 C / Gas 6. Line a baking tray with baking paper.
Arrange cubed aubergine, sliced courgettes, tomatoes, onion, red pepper and garlic in a single layer on the prepared baking tray. Drizzle with olive oil, rosemary, salt and pepper; toss vegetables until well coated.
Roast in the preheated oven until slightly tender; about 20 minutes. Mix and roast for another 12 minutes. Reduce heat to 150 C / Gas 2 and cook until vegetables begin to caramelise; about 10 minutes. Drizzle with balsamic vinegar.
