Mexican tortilla lasagne

    Tortillas replace lasagne sheeets in this fairly easy recipe for feeding a crowd who love Mexican-style comfort food.

    Ingredients
    Serves: 8 

    • 450g beef mince
    • 1/2 onion, finely chopped
    • 425g tomato passata
    • 1 (400g) tin black beans, rinsed and drained
    • 1 (400g) tin chopped tomatoes
    • 1 (200g) tin sweetcorn, drained
    • 125g green chillies from a jar, drained and chopped
    • 2 teaspoons chilli powder
    • 1 teaspoon ground cumin
    • 1 teaspoon minced garlic
    • 1/2 teaspoon dried oregano
    • 1/2 teaspoon chilli flakes
    • 6 flour tortillas
    • 225g grated Cheddar cheese

    Method

    1. Preheat oven to 180 C / Gas 4. Lightly grease a large baking dish.
    2. Heat a large pan over medium-high heat. Cook and stir beef mince and onion in the hot pan until beef is completely browned, 5 to 7 minutes.
    3. Stir tomato passata, black beans, chopped tomatoes, sweetcorn and chopped green chillies into the beef mixture; season with chilli powder, cumin, garlic, oregano and chilli flakes. Reduce heat to low and simmer for 5 minutes.
    4. Spread 1/2 a ladle of the beef mince into the bottom of the prepared baking dish; top with 3 tortillas, overlapping as needed. Spread one ladle of the beef mince over the tortillas. Sprinkle some of the grated cheese over mince layer. Finish with layers of remaining tortillas, mince and grated cheese, respectively.
    5. Bake in preheated oven until heated throughout and the cheese is melted, about 15 minutes. Cool 5 minutes before serving.
