Super Cinnamon Rolls

    Ingredients

    • For the dough
    • 300g plain flour
    • 1/8 tsp salt
    • 7g fast action yeast
    • 40g caster sugar
    • 150ml milk
    • 25g butter
    • 1 small egg
    • For the filling
    • 5 tbsp brown sugar
    • 5 tbsp butter or margarine
    • 1 tbsp cinnamon
    • For the icing
    • 2-3 tbsp water, melted butter or milk
    • 6 tbsp icing sugar
    • 1/8 tsp cinnamon

    Method

    1. Mix together the flour, yeast, caster sugar and salt in a large bowl.
    2. Add the 25g of butter to the 150ml of milk, then microwave until the butter is melted.
    3. Add the milk mixture and egg to the flour mixture. Mix together into a sticky dough, then knead until smooth and no longer sticky.
    4. Mix together the brown sugar and 1 tbsp of cinnamon, then cream in the 5 tbsps of butter until it resembles a thick, brown paste.
    5. Roll out and stretch the dough into a pound-coin-thick rectangle. Spread over the cinnamon butter.
    6. Roll the rectangle up, starting from the shortest width. Then cut into 1.5cm to 2cm rolls.
    7. Place onto a greased or lined tray, cover with cling film and prove for one hour. Preheat the oven to 220°C/200°C fan.
    8. Once proved, put the rolls into the oven for 7- 12 minutes.
    9. Once cooled, make the icing. Mix the 6 tbsp of icing sugar and 1/8 tsp of cinnamon, then add the liquid. Drizzle over the rolls and enjoy.
