Gluten free salmon cakes

    Whip up these gluten free salmon cakes in less than 20 minutes using milled flaxseed to bind the ingredients instead of flour.

    • 2 (213g) tins salmon, drained
    • 35g milled flaxseed
    • 1 egg
    • salt and ground black pepper to taste
    • 1 tablespoon olive oil

    Method

    1. Combine salmon, flaxseed, egg, salt and pepper in a bowl. Mix well and form into 4 fish cakes.
    2. Heat olive oil in a pan over medium-high heat. Fry salmon cakes until browned, about 4 minutes per side. Let sit about 2 minutes.
