Banana and carrot loaf

    You can top this delicious and moist cake with a cream cheese and maple syrup icing or omit the icing and eat it with butter.

    Ingredients
    Makes: 1 cake

    • 115g butter, melted
    • 150g caster sugar
    • 115 g dark brown soft sugar
    • 2 eggs
    • 1 teaspoon vanilla
    • 4 tablespoons milk
    • 250g self raising flour
    • 1/2 teaspoon baking soda
    • 1 teaspoon cinnamon
    • 1 teaspoon mixed spice
    • 1 pinch salt
    • 2 bananas, mashed
    • 125g grated carrots
    • 90g sultanas
    • For the icing
    • 3 to 4 tablespoons maple syrup
    • 2 tablespoons butter, softened
    • 200g cream cheese, softened

    Method

    1. Grease and line your loaf tin. Preheat oven to 180 C / Gas 4.
    2. Mix your melted butter and sugars until all combined.
    3. Add the rest of the ingredients and mix until combined. Pour into your tin and level out.
    4. Bake until a tester comes out clean, about 40 minutes. Remove from the oven and let cool.
    5. Once your loaf is cooled mix your cream cheese maple syrup and butter until smooth. Smother the top of your loaf with it.
