Jerk sauce marinade

Spicy jerk sauce to marinate pork chicken or fish. Keep in mind that Scotch bonnet peppers are very hot so adjust the amount to your personal tastes.

- 8 Scotch bonnet chillies incl. seeds
- 6 garlic cloves
- 2 limes, juiced
- 2 teaspoons ground cinnamon
- 2 tablespoons ground pimento
- 1 teaspoon ground nutmeg
- 2 tablespoons ketchup
- 3 tablespoon soy sauce
- 2 tablespoon soft brown sugar
- 1 bunch spring onions
- 1 onion
- 1 thumb size piece root ginger, peeled
- salt
- 3 to 4 tablespoons oil
- 4 sprigs thyme or 2 teaspoons dried thyme
