Jerk sauce marinade

    Spicy jerk sauce to marinate pork chicken or fish. Keep in mind that Scotch bonnet peppers are very hot so adjust the amount to your personal tastes.

    Ingredients
    Serves: 8 

    • 8 Scotch bonnet chillies incl. seeds
    • 6 garlic cloves
    • 2 limes, juiced
    • 2 teaspoons ground cinnamon
    • 2 tablespoons ground pimento
    • 1 teaspoon ground nutmeg
    • 2 tablespoons ketchup
    • 3 tablespoon soy sauce
    • 2 tablespoon soft brown sugar
    • 1 bunch spring onions
    • 1 onion
    • 1 thumb size piece root ginger, peeled
    • salt
    • 3 to 4 tablespoons oil
    • 4 sprigs thyme or 2 teaspoons dried thyme

    1. Place all your ingredients in a blender and blend till you've a smooth sauce. Place in a sterilized jar.
