Roasted carrots with homemade za'atar

    My daughters don't particularly like carrots but they can't get enough when I roast them seasoned with a homemade za'atar spice mix.

    Ingredients
    Serves: 6 

    • 1 tablespoon olive oil
    • 1 teaspoon sesame seeds
    • 1 teaspoon dried oregano
    • 1 teaspoon dried thyme
    • 1 teaspoon sumac powder
    • 1/2 teaspoon Himalayan pink salt
    • 1/2 teaspoon freshly ground black pepper
    • 6 carrots, peeled and sliced into 5cm strips

    1. Preheat the oven to 180 C / Gas 4.
    2. Combine olive oil, sesame seeds, oregano, thyme, sumac, pink salt and black pepper in a bowl. Add carrots and toss to coat; spread carrots on a baking tray in a single layer.
    3. Roast the carrots in the preheated oven until tender and lightly browned, about 20 minutes. Finish carrots under a hot grill until browned and crispy, 3 to 5 minutes more.
