Frozen tiramisu

    In this recipe, I have taken the classic tiramisu and turned it into a frozen dessert. It is certain to impress guests at any dinner party!

    Serves: 8 

    • 1 tablespoon instant coffee granules
    • 75g caster sugar, divided
    • 80ml boiling water
    • 200g cream cheese
    • 2 tablespoons Marsala wine
    • 300ml whipping cream, whipped
    • 225g plain sponge cake
    • 3 teaspoons cocoa powder
    • 50g dark chocolate, grated

    1. Line a 21cm x 14cm loaf tin with cling film, extending 5cm over sides. Combine the coffee and half the sugar in a heatproof bowl. Add 80ml boiling water and stir until coffee dissolves. Cool.
    2. Using an electric mixer, beat the cream cheese, marsala and remaining sugar until smooth. Beat in 1 tablespoon of the coffee mixture. Fold in the whipped cream.
    3. Slice the sponge cake into long rectangular slices or thick fingers so that they can be layered in the loaf tin. Brush sponge slices with remaining coffee mixture. Spread half of the cream cheese mixture on the bottom of loaf tin. Top with one layer of sponge, coffee side down. Repeat layers using remaining cream cheese mixture and sponge. Cover and freeze overnight.
    4. Remove the tiramisu from the tin and discard cling film. Place on a serving plate. Stand at room temperature for 15 minutes. Dust with the cocoa and decorate with grated chocolate. Cut into slices and serve.
