Black bean and sweetcorn tacos

    These quick and easy vegetarian tacos are packed with black beans, sweetcorn, tomatoes, avocado and feta cheese.

    • 2 (400g) tins black beans, rinsed and drained
    • 2 (340g) tins sweetcorn, rinsed and drained
    • 6 ripe tomatoes, chopped
    • 1 medium onion, chopped
    • 1 tablespoon freshly chopped coriander, or more to taste
    • 3 serrano or jalapeno chilli peppers, chopped, or more to taste (optional)
    • 3 cloves garlic, chopped, or more to taste
    • 120ml lime juice, divided
    • 4 avocados, sliced
    • 12 flour tortillas
    • 500g feta cheese, crumbled

    1. Combine black beans, sweetcorn, tomatoes, onion, coriander, chilli peppers and garlic in a large bowl. Mix in 4 tablespoons lime juice. Refrigerate mixture until flavours blend, about 1 hour.
    2. Place avocado in a container with remaining lime juice (to prevent browning).
    3. Place 5 tortillas on a microwave-safe plate and cover with a piece of damp kitchen roll. Microwave until warm and pliable, about 30 seconds. Repeat with remaining tortillas. Scoop bean mixture into tortillas; garnish with avocado slices and feta cheese.
