Courgette noodles with chickpeas and courgette flowers
Courgette flowers are added to this quick and easy vegan courgette noodle dish that is ready in under 30 minutes. Chickpeas add protein to the dish.

4 tablespoons olive oil
2 cloves garlic, minced
2 medium courgettes, sliced into noodles with a spiraliser
12 courgette flowers, stamens removed, sliced into strips
120g tinned chickpeas, drained and rinsed
6 fresh basil leaves, thinly sliced, or to taste

Heat olive oil in a large pan over low heat and cook garlic until softened, about 10 minutes. Add courgette and courgette flowers; mix well with olive oil. Add chickpeas and stir to combine. Season with salt and stir in basil. Serve immediately.
