Add oi to a large pan and sauté onion. Add beef and brown. Add garlic and cook for about 2 minutes. Season with salt and pepper.
Add all the other ingredients. Mix well and bring to a simmer. On lowest heat let the pot simmer, uncovered for at least 2 hours. Stir occasionally and if thickening too quickly add some water. Serve with freshly cooked pasta.
If you feel the sauce is a little sweet add 1 tablespoon red wine vinegar to balance it out.
