Mojo Picante or Red Mojo

    A flavoursome sauce served all over the Canaries. Especially used when eating Papas Arrugadas ( Canarian Potatoes)

    Ingredients

    • 2 red peppers roughly chopped
    • 6 garlic cloves crushed
    • 1 tsp cumin powder
    • 1 tsp paprika
    • 3-4 tbsp red wine vinegar
    • Olive oil
    • Sea salt to taste

    Method

    1. Place the red pepper and garlic in a blender with a good glug of olive oil. Blend until smooth. Add the remaining ingredients and blend together. If you want it more ‘Picante’ (spicy) you could add a little chilli powder to taste.

    Tip

    If you want the sauce to be slightly thicker you could add some pieces of bread when blending or if you was it thinner add a little water. Keep in a jar in the fridge. Use it on everything 😀
