Easiest ever potato bacon soup

    Make this winter warmer in minutes with this easy recipe for bacon and potato soup. Instead of bacon you could also use pancetta or diced ham.

    Serves: 2 

    • 30g butter
    • 1 medium onion, finely chopped
    • 2 to 3 medium potatoes, peeled and diced
    • 350ml water
    • 1/2 teaspoon dried dill (optional)
    • 1/2 teaspoon salt
    • 1/4 teaspoon ground black pepper
    • 425ml milk
    • 3 rashers streaky bacon, cooked and chopped
    • 1 tablespoon dried parsley, or to taste

    1. Melt the butter in a saucepan over medium heat; cook and stir the onion until lightly browned, about 10 minutes. Add potatoes, water, dill, salt and pepper; bring to the boil. Reduce heat and simmer until potatoes are tender and water is almost all evaporated, at least 30 minutes.
    2. Stir milk and bacon into potato mixture; bring to the boil. Remove from heat and stir parsley into soup.
