Ingredients

good knob butter
100g (3¾ oz) flaked almonds
1 (500g) bag spinach, torn
125g (4¼ oz) dried cranberries
Dressing:
2 tablespoons toasted sesame seeds
1 tablespoon poppy seeds
100g (3¾ oz) caster sugar
1 dessertspoon minced onion
1/4 teaspoon paprika
4 tablespoons white wine vinegar
4 tablespoons cider vinegar
8 tablespoons extra virgin olive oil

1.
In a medium saucepan, melt butter over medium heat. Add almonds and stir in butter until lightly toasted. Remove from heat and let cool.

In a large bowl, combine the spinach with the toasted almonds and cranberries.
3.
In a medium bowl, whisk together the sesame seeds, poppy seeds, sugar, onion, paprika, white wine vinegar, cider vinegar and oil. Toss with spinach just before serving.

Lovely! So easy and quick to prepare. There's nothing like the smell of toasting almonds.
