    About this recipe: Everyone I have made this for absolutely loves it! It's something different with a great presentation, yet so easy to make.

    Serves: 8 

    • good knob butter
    • 100g (3¾ oz) flaked almonds
    • 1 (500g) bag spinach, torn
    • 125g (4¼ oz) dried cranberries
    • Dressing
    • 2 tablespoons toasted sesame seeds
    • 1 tablespoon poppy seeds
    • 100g (3¾ oz) caster sugar
    • 1 dessertspoon minced onion
    • 1/4 teaspoon paprika
    • 4 tablespoons white wine vinegar
    • 4 tablespoons cider vinegar
    • 8 tablespoons extra virgin olive oil

    1. In a medium saucepan, melt butter over medium heat. Add almonds and stir in butter until lightly toasted. Remove from heat and let cool.
    2. In a large bowl, combine the spinach with the toasted almonds and cranberries.
    3. In a medium bowl, whisk together the sesame seeds, poppy seeds, sugar, onion, paprika, white wine vinegar, cider vinegar and oil. Toss with spinach just before serving.

    Ive made this recipe a couple of times now. The first time I made as the recipe (other than replacing teh vegetabe oil for EVOL). The second time I thought it needed a few changes ~ I added a little Feta cheese and a finely chopped onion. I also thought there was way too much dressing the first time, so the second time around I halved the dressing and found it was so much better. Great salad ~ thank you for sharing. - 12 Jan 2013
