Refried black beans

    These low fat refried black beans are great to use in enchiladas, tacos or even as a vegan sandwich spread.

    Ingredients
    Serves: 4 

    • 475g tinned or cooked black beans, divided
    • 120ml water
    • 2 cloves garlic, minced
    • 1 teaspoon pepper
    • 1 teaspoon salt
    • 1 teaspoon smoke syrup or smoke seasoning
    • 125g diced onion

    Method

    1. In a small bowl mash 2/3 of the beans into a smooth paste.
    2. In a medium saucepan over medium heat, combine the remaining beans with the water. When heated through, stir in garlic, pepper, salt and seasoning.
    3. Stir the mashed beans into the whole beans and mix well. Stir in the onion and cook for 10 minutes, or until onions are slightly cooked.
