Marmite® and cheese bread pudding

    This savoury bread and butter pudding is based on a traditional bread and butter pudding. I love Marmite® and any cheese but even if you aren't a Marmite fan please give this a try either for a lunchtime meal or light supper dish, you might become a Marmite convert! It's very moreish and great served with a nice tomato and lettuce salad.

    Serves: 2 

    • 4 slices of bread of your choice, crusts removed
    • butter or margarine for spreading
    • 2 teaspoons Marmite® for spreading, more to taste
    • 60g (2 oz) of your favourite cheese, grated
    • 1 large egg
    • 150ml (1/4 pt) milk
    • pepper to taste

    1. Spread the crustless bread with the butter and Marmite to make two sandwiches.
    2. Cut the sandwiches each into four 'soldiers'.
    3. Place four 'soldiers' into a lightly greased dish and cover with half of the grated cheese. Repeat with the remaining 'soldiers' and cheese
    4. Whisk together the egg, milk and pepper (Marmite is salty to taste so don't add anymore until serving) then pour the liquid over the bread 'soldiers'. Allow to soak for 30 minutes.
    5. Preheat the oven to 190 C / Gas 5.
    6. Bake in the pre-heated oven for 25 to 30 minutes.


    For an even stronger, cheesy taste, sprinkle with Parmesan before putting in the oven. This makes it crunchier.
