Slow cooker spicy pork and sweet potatoes

    This Cuban-style dish of pork and sweet potato simmered in a mixture of orange juice and tomatoes is easy to make in your slow cooker. Serve with rice if you like.

    Serves: 6 

    • 675g sweet potatoes, cut into 1cm cubes
    • 450g pork loin or shoulder, cut into 1cm cubes
    • 1 (400g) tin chopped tomatoes with chilli
    • 4 tablespoons orange juice
    • 1 1/2 tablespoons lime juice
    • 2 cloves garlic, pressed
    • 1/4 teaspoon ground cumin
    • 1/4 teaspoon salt
    • 1/4 teaspoon ground black pepper
    • 1 tablespoon freshly chopped coriander, or to taste

    1. Mix sweet potatoes, pork, chopped tomatoes, orange juice, lime juice, garlic, cumin, salt and black pepper together in a slow cooker.
    2. Cook on Low for 6 hours. Garnish with chopped coriander.
