Blueberry clafoutis

    A custard mixture is sweetened with honey and mixed with blueberries, then baked to make this easy clafoutis-style dessert. Serve warm or cold.

    Ingredients
    Serves: 8 

    • 3 tablespoons butter
    • 8 eggs
    • 4 tablespoons honey
    • 600ml milk
    • 1 teaspoon vanilla extract
    • 75g plain flour
    • 1/2 teaspoon salt
    • 150g blueberries
    • 1/2 teaspoon ground nutmeg
    • 3 tablespoons icing sugar for dusting

    1. Preheat oven to 220 C / Gas 7. Place butter in a baking dish and place dish in oven to melt butter.
    2. In a blender, combine eggs, honey, milk, vanilla, flour and salt. Blend until smooth. Pour over melted butter in hot dish. Sprinkle blueberries on top.
    3. Bake in preheated oven 20 to 25 minutes, until puffed and golden. Sprinkle with nutmeg and icing sugar.
