Scheiterhaufen (German apple bread pudding)

    If you have dry bread rolls left over, try this tradition German bread pudding. You can serve it plain dusted with icing sugar, or warm with chilled vanilla custard.

    Serves: 6 

    • 8 dry white bread rolls, sliced thinly
    • 300ml milk
    • 1 pinch salt
    • 3 eggs
    • 100g caster sugar
    • 1/2 teaspoon cinnamon
    • 2 teaspoons vaniila sugar
    • 1 lemon, zested
    • 2 large apples, about 500g total
    • 50g raisins
    • icing sugar for dusting

    1. Heat your oven to 190 C / Gas 5. Butter a baking dish.
    2. Beat milk, salt, eggs, sugar, cinnamon, vanilla sugar and lemon zest. Place bread slices in a large bowl and pour the mixture over them. Let it soak in for 10 minutes.
    3. In the meantime peel and quarter apples. Remove core and slice apples thinly. Mix with the raisins.
    4. Alternate layers of soaked bread and apple slices and pour the of the liquid on top.
    5. Bake in the preheated oven till golden, about 40 to 45 minutes. Dust with icing sugar and serve warm.
