Spinach feta puff pastry

    You can make these puff pastry pockets as small or large as you like. It makes about 9 large or 18 small ones and remember that smaller bakes quicker too.

    • 2 tablespoons olive oil
    • 750g fresh or frozen spinach leaves
    • 225g feta cheese, crumbled
    • 1 onion, minced
    • salt and pepper
    • 1 pinch ground nutmeg
    • 1 (375g) packet ready rolled puff pastry
    • 1 egg yolk

    1. Preheat oven to 200 C / Gas 6. Line a baking tray with greaseproof paper.
    2. Heat olive oil in a large frying pan and fry onion till transclucent. Add spinach an cook till completely wilted. Remove from hob and pour off the liquid.
    3. Let spinach cool till you can handle it, then chop. In a bowl mix with feta, a tiny bit of salt (the feta already makes it salty), pepper and nutmeg.
    4. Cut puff pastry into 9 rectangles. Place 2 to 3 tablespoons filling in the centre of each rectangle. Flip the pastry over and seal the sides by pressing them together with your fingertips.
    5. Beat egg yolk with 2 tablespoons cold water and brush the puff pastry with it.
    6. Place pocket on the prepared baking tray and bakin the preheated oven till golden and crispy. about 15 to 20 minutes for smaller pockets and 25 minutes for larger ones.
