This elderflower cordial is especially good for mixing cocktails. You can easily double or triple the amounts.

Makes: 1 kleine flasche
50g elderflowers (about 10 total)
400ml white wine, as needed
1 lemon, washed and sliced
200g caster sugar, as needed

Gently shake the elderflowers to remove any insects. Place in a container with a lid and add the lemon. Add the white wine and push the flowers down, they should be covered with wine. Add more wine if necessary. Cover and place in the fridge for 3 days.
Strain through a fine sieve. Measure the liquid and add half of that amount in sugar. Add with the wine to a saucepan and bring to the boil. Cook for a few minutes till the sugar has dissolved.
Pour in a sterilised bottle and close with a cork. Refrigerate and use within a few weeks.
