This no bake summer berry tart can be made with different berries. My favourite is raspberries and blueberries but feel free to use strawberries and even redcurrants.

Ingredients
Makes: 1 Tarte
For the pastry cream
500ml milk
1/2 vanilla bean, cut lengthwise
4 egg yolks
90g caster sugar
50g plain flour
1 teaspoon cornflour
1 knob butter
1 sweet baked pastry case
200g fresh blueberries
150 to 225g fresh raspberries

Heat 400ml milk and vanilla bean in a small saucepan until hot but not boiling. Remove from the hob.
in a bowl whisk egg yolks and sugar till creamy and light in colour. Mix flour and cornflour and stir it into the egg mixture till smooth. Add the remaining milk and stir again till smooth.
Remove the vanilla bean from the milk and add the egg mixture. Stir well and slowly heat at low temperature till thickened, 6 to 8 minutes.
Remove from the heat and tip into a bowl. Dot with butter to prevent a skin from forming. Cover and place in the fridge for at least 30 minutes.
Starting at the centre, cover the pastry case with blueberries, then with raspberries. Carefully spread the chilled pastry creme on top and let set in the fridge for several hours.
