Zoo birthday cake

    My daughter loves animals so I made her a zoo cake for her birthday. The cake itself is a simple sponge, the decoration is what makes it special. You can find most of it at arts and crafts supply shops and also at model railways shops.

    Serves: 4 

    • For the pastry
    • 400g caster sugar
    • 225g butter, softened
    • 4 eggs
    • 4 teaspoons vanilla extract
    • 400g plain flour
    • 1 tablespoon baking powder
    • 250ml milk
    • For the icing
    • 450g cream cheese, at room temperature
    • 120g butter, at room temperature
    • 250g icing sugar, sifted
    • 1 teaspoon vanilla extract
    • green food colouring
    • For the zoo
    • miniature fence
    • plastic trees or bushes
    • plastic animals
    • candles

    1. Preheat your oven to 180 C / Gas 4. Line a baking tray with greaseproof paper or grease it very well.
    2. Beat sugar and butter in a large bowl till creamy. Add eggs one by one and beat well after each addition. Add vanilla extract. Mix flour and baking powder and add to the mixture, alternating with the milk. Spread on the prepared baking tin.
    3. Bake in the preheated oven till a toothpick comes out clean, 20 to 30 minutes. Let cake cool completely.
    4. Für das icing beta cream cheese and butter till creamy. Add vanilla extract, then gradually stir in icing sugar till smooth. Add food colouring a few drops at a time till you obtain the desired shade of green.
    5. Place the entire cake on a large cutting board, or cut it in half, spread one half with some icing. Place the second half on top.
    6. Cover the cake all over with the icing and decorate with coloured sprinkles.
    7. Place the fence along the edge of teh cake and create individual cages.
    8. Place animals in cages and decorate with trees and candles.
