Hedgehog cake

    I wanted to make this cake for a long time and finally got around to it at my daughter's birthday. Start the chocolate cream filling the day before because it needs to chill overnight.

    Makes: 1 cake

    • For the chocolate cream filling
    • 150g whole milk chocolate
    • 50g dark chocolate
    • 500ml whipping cream
    • For the chocolate sponge:
    • 5 eggs, separated
    • 3 tablespoons lukewarm water
    • 120g caster sugar
    • 2 teaspoons vanilla sugar
    • 180g plain flour
    • 1 teaspoon baking powder
    • 3 teaspoons unsweetened baking cocoa
    • 1 pinch salt
    • For the decoration
    • 3 brown Smarties®
    • 1 to 2 packets Mikado® milk chocolate biscuits

    1. Start the day before by chopping the chocolate.
    2. Heat cream in a saucepan. Remove from the hob and add chocolate. Stir till completely dissolved. Let cool then refrigerate overnight.
    3. Preheat your oven to 180 C / Gas 4. Line a baking tray with greaseproof paper.
    4. In a bowl beat egg yolks with the lukewarm water and 2/3 of the sugar and the vanilla sugar till foamy.
    5. In a separate bowl beat egg whites till peaks form, then gradually add remaining sugar whilst continuing to beat till stiff. Add egg yolk mixture.
    6. In an bowl mix flour, baking powder, cocoa and salt and sift onto the egg mixture.
    7. Fold into the egg mixture using a spatula.
    8. Spread the mixture on the baking tray.
    9. Bake in the preheated oven for 15 to 20 minutes. Test for doneness by inserting a toothpick.
    10. Let cool, then cut out the hedgehog body from one half of the sponge.
    11. From the other half of the sponge cut out a second, smaller hedgehog.
    12. Place the leftover scraps from both hedgehogs in a bowl and crumble them.
    13. Remove chocolate cream from the fridge and beat with an electric mixer till stiff.
    14. Cover the larger hedgehog body with chocolate cream and place the smaller hedgehog on top.
    15. Add enough chocolate cream to the crumbs to make everything hold together.
    16. Place the mixture on the back part of the hedgehog and shape the hedgehog body. Leave the front uncovered for the face and spread with chocolate cream.
    17. Spread the rest of the cream over the sides. Even the front part (face) out with a spatula. Add Smarties for the eyes and nose.
    18. Evenly break Mikado in half and insert into the hedgehog for the spikes. Refrigerate cake till serving.
