This Spanish potato tortilla only has four ingredients but the trick is to cut the potatoes into very thin slices and fry them slowly. Serve it with other Spanish tapas.

4 medium potatoes
250ml olive oil
salt and pepper

Peel potatoes and slice thinly. Beat eggs.
Heat olive oil in a large frying pan with non stick coating. Add potato slices and fry over medium heat, turning them often. Make sure you don't break them when turning. Once the potatoes are cooked, remove them from the pan. Pour off some of the oil. Let potatoes cool slightly, then mix them with the eggs.
Reheat the oil that is in the pan. Add the potato mixture and flattten flatten it with a turner. Cook over medium heat till the eggs have set and the bottom is lightly browned. Using a large lid, flip the tortilla over and fry the other side till golden brown. Cut into wedges like a pie and serve hot or cold.
