Pear butter

    The pear butter is slowly cooked in the oven because creates a bit of a mess if you make it on the hob. Adjust the amount of spices to your personal taste.

    Ingredients
    Makes: 3 to 4 small jars

    • 2kg ripe pears
    • demerara sugar as needed
    • 1 teaspoon ground cinnamon, to taste
    • 1 generous pinch ground cloves, to taste
    • 1/2 teaspoon ground allspice, to taste
    • 1 generous pinch ground ginger, to taste

    Method

    1. Peel and core the pears and chop coarsely. Place in a large pot (ideally one that you can put in the oven afterwards) and cook till soft. Puree till smooth.
    2. Weigh the puree and and add 1/3 of the weight in sugar. Cook whilst stirring till the sugar has dissolved.
    3. If you have used a regular pot on your hob, transfer the mixture into an ovenproof dish, or place your pot in the oven. Leave uncovered and cook at 12 C for about 2 hours, depending how juicy your pears are. Check every so often and stir so it does not burn.
    4. Fill butter in jars while still piping hot and close jars with lids immediately.

    Tip

    You can also make the pear butter in your slow cooker. After Step 2, transfer to your slow cooker and cook on low for about 10 hours, depending how juicy the pears are.
