Elotes (Mexican sweetcorn in a cup)

    Inspired by Mexican street food, elotes are the perfect party starter in a cup! All you need is sweetcorn, mayo, chilli powder, Parmesan cheese and lime juice.

    Serves: 4 

    • 850g sweetcorn, drained
    • 4 tablespoons mayonnaise, or to taste
    • 4 tablespoons grated Parmesan cheese, or to taste
    • 4 teaspoons chilli powder with lime (such as Tajin(R)), or more to taste
    • 1 lime, or more to taste

    1. Heat sweetcorn in a pan over medium heat until steaming, about 5 minutes. Remove from heat and drain water.
    2. Fill several cups or mugs halfway with the sweetcorn. Add 1 tablespoon mayonnaise, 1 tablespoon Parmesan cheese and 1 to 2 teaspoons chilli powder to each cup. Squeeze lime juice on top.
