Baked avocado and egg

    A delicious brunch dish of baked avocado and egg that can be easily multiplied if you're feeding a crowd.

    Ingredients
    Serves: 1 

    • 1 avocado, halved and pitted
    • 2 eggs
    • 30g grated Cheddar cheese
    • salt and freshly ground black pepper to taste
    • 1 tablespoon chopped fresh parsley, or to taste (optional)

    Method

    1. Preheat the oven to 220 C / Gas 6.
    2. Scoop out a little of the avocado from where the stone was to make room for 1 egg. Place on a baking tray and crack 1 egg on top of each avocado half.
    3. Bake in the preheated oven until egg is cooked, 15 to 20 minutes. Sprinkle Cheddar cheese on top and season with salt and pepper. Garnish with fresh parsley.
