Socca, a gluten free, yeast free and vegan flatbread, is a specialty from the French city of Nice. You need a cast iron pan for this recipe.

Ingredients
Makes: 2 flatbreads
125g chickpea flour
220ml water
1 tablespoon olive oil
salt and pepper
1/2 teaspoon ground cumin
vegetable oil for the pan

Mix chickpea flour, water and olive oil in a bowl. Add salt, pepper and cumin to taste and stir till smooth. Let rest at room temperature for 2 hours.
Preheat your oven to 230 C / Gas 8. Place a cast iron pan in the oven and let heat for 5 to 7 minutes. Carefully remove the pan from the oven, grease with a little vegetable oil and pour half of the mixture in the pan. Tilt the pan so the mixture is evenly distributed. Bake until the socca is set, about 7 minutes. Turn on your oven grill and let brown for 1 minute.
Remove the first socca from the pan and repeat with the rest of the mixture. Cut into pieces and serve hot, sprinkled with pepper. Or garnish with caramelised onions or other toppings of your fancy.
