This is a quick and easy Indian-inspired chicken pasta dish that you can easily whip up if you are in a rush for dinner. My kids love it!

2 teaspoons oil
500g chicken breast pieces or turkey mince
1 green pepper, sliced into strips
1 onion, sliced into strips
1 clove garlic, crushed
1/2 teaspoon garam masala
1 teaspoon ground coriander
1/4 teaspoon ground turmeric
1 (400g) tin chopped tomatoes
freshly chopped coriander to serve

Cook pasta in salted, boiling water according to packet instructions.
Heat oil in a large pan over medium heat; add chicken and stir to brown on all sides, about 5 to 8 minutes. Stir in peppers, onion and crushed garlic. Cook and stir for another 5 minutes until vegetables are softened. Stir in garam masala, ground coriander, turmeric and chopped tomatoes; stir to mix well and simmer until heated through.
Drain the pasta; stir into the pan until well coated. Serve with freshly chopped coriander leaves.
