This is a Indian fish curry that uses mackerel but you could use any other rich and oily fish and it will be just as good.

Ingredients
Serves: 4
1 tablespoon coconut oil
1 teaspoon mustard seeds
3 shallots, finely chopped
1/2 teaspoon garlic-ginger paste
3 green chillies, sliced in half
1/4 teaspoon turmeric
2 tablespoons masala spice mix
250ml water
salt, to taste
600g mackerel, cut into bite sized pieces
1 mango, diced
2 sprigs curry leaves, optional

Heat coconut oil in a heavy saucepan; add the mustard seeds and fry until they start to pop. Add shallots, garlic-ginger paste and green chillies. Fry until the shallots are starting to brown.
Stir in turmeric and masala spice mix; cook and stir for 2 minutes. Add water and season to taste with salt. When it comes to the boil, add mackerel, mango and curry leaves. Cover and cook over low heat for 10 minutes.
