Chilled coconut mango soup

    On hot summer days, you can dish up this refreshing mango soup with coconut milk and yoghurt in five minutes.

    Ingredients
    Serves: 6 

    • 2 (425g) tins mango puree
    • 225ml milk
    • 225g natural yoghurt
    • 1/2 (400g) tin coconut milk light
    • 1 pinch cayenne, to taste
    • 1/2 teaspoon mild chilli powder, to taste
    • 1 pinch salt
    • minced fresh coriander or mint

    Method

    1. Puree all ingredients except the herb in your blender or food processor till smooth.
    2. Place in the fridge till well chilled, several hours to overnight. Garnish with coriander or mint.
