Cheat's summer trifle

    This quick and easy layered dessert is my version of a cheat trifle that takes a few short cuts! Cubes of sponge cake are topped with blueberries, strawberries and a delicious creamy mixture of Greek yoghurt, whipped cream and melted white chocolate. A delicious summer dessert!

    Ingredients
    Serves: 4 

    • 125ml of whipped cream
    • 1 tablespoon caster sugar
    • 250ml Greek yoghurt
    • 40g white chocolate
    • 150g blueberries
    • 250g strawberries, cubed
    • plain sponge cake, sliced into bite-size cubes

    Method

    1. Beat the whipped cream with 1 tablespoon of caster sugar.
    2. Melt the white chocolate in the microwave for 30 seconds; stir and microwave again for another 10 to 30 seconds until smooth. Set chocolate aside to cool.
    3. Mix the whipped cream, melted white chocolate and the Greek yoghurt together until well combined.
    4. Divide the cake cubes into four short glasses. Spoon an equal amount of blueberries on top of the cake cubes; spoon cream mixture on top. Finish by spooning an equal amount of strawberries on top of each glass.
