Peach crumble

    Fresh peaches with a delicious crumble topping. Serve warm from the oven with a scoop of ice cream for an irresistible summer dessert. This recipe serves two but you could easily double it.

    Serves: 2 

    • 25g plain flour
    • 20g soft brown sugar
    • pinch of salt
    • 25g oats
    • 30g cold butter, cubed
    • 1 or 2 peaches, peeled and cubed
    • 1/2 tablespoon caster sugar
    • pinch of cinnamon

    1. Preheat the oven to 180 C / Gas 4.
    2. Mix flour, sugar, salt, oats and cubes of butter with your fingers until the mixture becomes crumbly.
    3. Place the peaches in the bottom of a small baking dish. Sprinkle with sugar and cinnamon; spread the crumble mixture on top of the peaches, pressing down lightly.
    4. Bake the crumble in preheated oven for 25-30 minutes, or until lightly browned.
