Buckwheat mini pancakes

    A really easy recipe for mini pancakes using self-raising flour and buckwheat flour. Delicious served with butter or icing sugar and fresh fruit.

    • 150g self-raising flour
    • 100g buckwheat flour
    • pinch of salt
    • 250ml milk, at room temperature
    • 2 eggs, beaten
    • 2 tablespoons maple syrup

    1. Mix self-raising flour, buckwheat flour and salt together in a bowl; mix in and milk gradually with a whisk. Add the eggs and maple syrup; mix well until combined. Transfer the batter to a piping bag with wide nozzle.
    2. Lightly grease a non-stick pan over medium heat. Working in batches so you don't overcrowd the pan; add dollops of batter to create thick mini pancakes. Cook on one side until golden brown, turn over and cook other side until cooked through. Repeat with remaining batter. Serve warm.
