Farro black bean salad with avocado and apple

    This grain salad has a lovely nutty taste from the farro. The black beans, avocado and apple make it a filling vegan meal. A salad dressing made with fresh coriander, shallots and white wine vinegar makes it taste even better!

    Ingredients
    Serves: 2 

    • 125g farro
    • 1 tablespoon white wine vinegar
    • 2 tablespoons olive oil
    • 1 small bunch fresh coriander, finely chopped
    • 1 shallot, finely chopped
    • salt and pepper, to taste
    • 1 apple - peeled, cored and cubed
    • 1 (400g) tin black beans, rinsed and drained
    • 1 avocado, peeled and cubed

    1. Cook the farro according to the packet instructions; drain and set aside to cool slightly.
    2. Whisk white wine vinegar, olive oil, freshly chopped coriander, finely chopped shallot, salt and pepper together in a bowl. Stir in chopped apple.
    3. Pour dressing on top of cooked farro; stir in black beans and top with avocado.
