An easy oriental dish of spicy beef mince, noodles and plenty of healthy green vegetables! Chopsticks are not compulsory!

Ingredients
Serves: 3
1 beef stock cube
200g rice noodles
150g tender stem broccoli, sliced
100g pak choi, sliced
30g fresh spinach leaves
250g beef mince
1 tablespoon honey
1 tablespoon olive oil
2 cloves of garlic
ketchup
freshly ground black pepper, to taste
1 teaspoon sambal (chilli sauce)
2 spring onions, sliced
1/2 lime, quartered

Crumble the stock cube into a pan; add 500ml water to cover. Bring to the boil and when the stock cube is dissolved add the noodles. Cook them according to the time on the packet, adding the green vegetables about one minute before the end of the cooking time; drain the vegetables and noodles into a colander set on top of a large bowl so you can reserve the cooking liquid.
Fry beef mince without oil in a frying pan until browned; stir in honey. Transfer the beef mince into a bowl and set aside.
Heat the oil in the same frying pan and briefly fry the garlic. Add the green vegetables, noodles, soy sauce, black pepper, sambal and some of the reserved stock. Stir to mix well and heat noodles through.
Divide evenly into bowls and top with chopped spring onions and a wedge of lime.
