Guacamole with tomatoes and chilli

    This spicy guacamole with tomatoes and chilli is a great side dish for a barbecue party. Use ripe, yet firm avocados for best results.

    • 2 large avocados, peeled and stoned
    • juice of 1 lime
    • 1/2 teaspoon salt
    • 2 fresh, red chilli peppers, finely chopped
    • 2 ripe tomatoes, seeded and finely chopped
    • 2 tablespoons of freshly chopped coriander

    1. Mash the avocado, lime, salt and finely chopped chilli peppers with a fork. Add tomato and coriander. Serve immediately or store in fridge for an hour.
