Peach sorbet

    Your peaches should be really ripe, and one way of knowing they are ripe is when the skins come off effortlessly.

    Serves: 8 

    • 500g ripe peaches
    • 2 tablespoons lemon juice
    • 125ml water
    • 100g granulated sugar

    1. Skin the peaches and remove stone. Puree till smooth in a blender. Measure out 375g puree. Stir in lemon juice immediately and place in the fridge.
    2. Bring water and sugar to the boil in a small saucepan and stir till sugar is dissolved. Let cool, then refrigerate till chilled.
    3. Once the peach puree and the syrup are well chilled, pour into your ice cream maker and follow instructions for sorbet.
