Dairy free peach crumble

    Der Pfirsichcrumble wird statt mit Butter mit Kokosöl gemacht. Er schmeckt am besten warm mit Vanilleeis oder Schlagsahne, aber kalt kann man ihn auch essen.

    Serves: 10 

    • 800g ripe peaches
    • 2 tablespoons light brown soft sugar
    • 125g plain flour
    • 100 to 125g caster sugar, depending on the sweetness of the peaches
    • 1 level teaspoon baking powder
    • 1 pinch salt
    • 1/2 teaspoon ground cinnamon
    • 1 egg, lightly beaten
    • 50g coconut oil

    1. Preheat your oven to 180 C / Gas 4. Grease a gratin dish.
    2. Cut an x in each peach. Bring a large pot with water to the boil and blanch peaches for 2 minutes. Remove skins and stones and cut peaches into wedges.
    3. In a large bowl mix peaches, brown sugar and 2 tablespoons of the flour. Place in the prepared dish in an even layer.
    4. In a second bowl mix flour, baking powder, salt and cinnamon. Add egg and stir with a fork until evenly mixed. Liquify coconut oil in the microwave for a few seconds. Scatter globs of the mixture over the peaches.
    5. Bake in the preheated oven till golden brown and bubbly, about 55 to 60 minutes.
