Peach chutney

    Making your own peach chutney is fun and you can decide how sweet or spicy you want it to be. It also makes a great food gift.

    Makes: 4 small jars

    • 1kg ripe peaches
    • 2 large onions
    • 50g fresh root ginger, peeled
    • 1 fresh red chilli
    • 150g sultanas
    • 300g demerara sugar
    • 250ml white wine vinegar
    • 1/2 teaspoon ground allspice

    1. Bring water to the boil in a large pot. Cut an X in the bottom of each peach and drop the peaches in the boiling water. Leave till the skin starts curling, about 1 minute. Drop the peaches in a bowl with cold water, then drain and peel immediately. Remove stones and coarsely chop peaches.
    2. Mince onions, root ginger and chilli and add to a large pot with the peaches, sultanas, sugar, vinegar and allspice. Let marinate in the fridge for 2 hours.
    3. Place the pot on the hob and slowly bring the mixtre to the boil. Simmer uncovered for 30 minutes. If there is a lot of extra liquid after that time, pour some of it off. Place hot chutney on sterilised jars and close tightly with lids. Turn jars upside down to seal and leave to cool.
