Panna cotta with strawberries

    This panna cotta is made with cream, sugar, gelatine, Greek yogurt and lemon. Simply beautiful when served with mashed strawberries.

    Makes: 4 -6

    • 250ml whipping cream
    • 75g caster sugar
    • 2 tablespoons water
    • 2 teaspoons gelatine powder
    • 1 teaspoon grated lemon zest
    • 1 tablespoon lemon juice
    • 300ml Greek yoghurt
    • 400g strawberries, hulled
    • granulated sugar, to taste

    1. Mix 2 tablespoons of water with the gelatine in a bowl; let stand for 5 minutes.
    2. Stir cream and sugar in a saucepan over low heat; let it warm slowly until the sugar has completely dissolved, about 5 minutes.
    3. Remove from heat and add the gelatine mixture, lemon zest and lemon juice. Stir well until the gelatine has dissolved. Allow the mixture to cool slightly.
    4. Stir the Greek yogurt into the cream mixture; pour into 4 or 6 glasses or ramekins; cover each glass with cling film. Store in the fridge for at least 3 hours.
    5. Mash or puree the strawberries; add sugar to taste. Spoon the strawberry puree on top of panna cottas when ready to serve.
