Cheesy scrambled eggs with red pepper and spring onions

    Scrambled eggs are an incredibly easy dish and you can vary the additions depending on what you need to use up! I had red peppers, spring onions and Cheddar in the fridge and this turned out to be a delicious combination that I make it all the time now!

    Serves: 1 

    • 2 eggs
    • 1 or 2 tablespoons milk
    • generous handful grated Cheddar cheese
    • salt and pepper, to taste
    • knob of butter
    • 1/4 red pepper, diced
    • 1 or 2 spring onions, finely chopped

    1. Beat the eggs with milk. Add the grated cheese and season with salt and pepper.
    2. Melt the butter in a frying pan until it starts to foam. Add the red pepper and spring onions; cook for 2 minutes. Lower the heat and add egg mixture. Stir slowly until the egg is scrambled, but not overcooked.
