Green salad with fresh figs and Parma ham

    With just a few seasonal ingredients, you can enjoy this delicious summer salad of fresh figs and tomatoes, served on mixed salad leaves with Parma ham.

    Serves: 2 

    • 100g mixed salad leaves
    • 8 cherry tomatoes, halved
    • 4 4 ripe figs, quartered
    • 5 slices Parma ham, torn into pieces
    • Salad dressing
    • 3 tablespoons olive oil
    • 1 tablespoon white wine or Champagne vinegar
    • 1/2 tablespoon honey or agave syrup
    • salt and freshly ground black pepper, to taste
    • pinch of dried oregano

    1. Place salad leaves in a bowl; add halved cherry tomatoes, figs and Parma ham.
    2. Whisk olive oil, vinegar and honey together in a small bowl. Season to taste with salt, black pepper and dried oregano. Pour over salad and serve.
