Bread machine quark bread

    Quark is a low fat soft cheese used a lot in Europe and now widely available in our supermarkets. It tastes great in bread recipes.

    Makes: 1 loaf

    • 2 eggs
    • 450g quark
    • 40g honey
    • 475g plain flour
    • 25g vital wheat gluten
    • 2 teaspoons salt
    • 1 (7g) sachet fast action dried yeast
    • 30g chopped nuts and raisins (optional)

    1. Crack eggs into a large bowl; beat well. Stir in quark cheese and honey.
    2. Mix flour, vital wheat gluten and salt in another bowl. Stir in chopped nuts and raisins if using.
    3. Place the quark mixture in the bread tin in machine. Add flour mixture and sprinkle yeast on top. Close the lid and select basic setting for a large bread with medium crust.
