Chicken and pineapple curry

    This is an easy chicken curry with onions and pineapple that kids simply gobble up! Serve with hot rice.

    Serves: 4 

    • 1L chicken stock
    • 4 boneless, skinless chicken breasts
    • 200g rice
    • 1 onion
    • 100 gr plain flour
    • 100 gr butter
    • 4 teaspoons hot curry powder
    • 8 slices pineapple, sliced into bite-size pieces

    1. Bring 1 litre of chicken stock to the boil; add chicken breasts and poach in the stock until tender, about 15 minutes. Scoop chicken breasts out with a slotted spoon and slice into cubes; reserve poaching liquid.
    2. Meanwhile, cook the rice according to the directions on the packet.
    3. Melt butter in a pan; add onions and fry until golden and starting to soften. Stir in plain flour. Add 250ml poaching liquid and stir well to create a sauce. Stir in curry powder.
    4. Add chicken and pineapple to the curry; warm through and serve with cooked rice.
