Pork fillet with herb and mustard crumb topping

    Roast pork fillets with a fresh herb and mustard breadcrumb topping are easy to prepare and ready in under 30 minutes.

    Serves: 2 

    • 1 tablespoon olive oil
    • 2 small pork fillets (about 150g each)
    • salt and pepper
    • 1 tablespoon finely chopped thyme
    • 1 tablespoon finely chopped rosemary
    • 1 tablespoon finely chopped parsley
    • 25g breadcrumbs or panko breadcrumbs
    • 2 tablespoons Dijon mustard

    1. Preheat the oven to 180 C / Gas 4.
    2. Heat the olive oil in a frying pan over medium heat; add pork fillets and cook until browned on all sides, about 2-3 minutes on each side. Season with salt and pepper.
    3. Mix the herbs with the breadcrumbs and mustard until combined.
    4. Place the pork fillets in a greased oven dish and spread the herb filling on the top of the pork, pressing it down so it sticks.
    5. Cook the pork fillets in preheated oven for about 15 minutes, or until they are cooked through.
